Set the expiry date on an upload step
Mark a date field as the expiry date, or have the reviewer type it in.

With Check with AI. In Fields to find, select a date field and choose This is the expiry date. Only one field can be marked. Until one is, uploads on this step don't expire.
Without Check with AI. The reviewer types the expiry date when they approve each upload.
